Over Temp High

Why does my oven temp read 164 on my digital Bradley when I have temp set at 150?? I don't want to over cook my Salmon.

A couple of reasons.  The temp control in the Bradley fluctuates somewhat.  Although the temp swing doesn't matter in most cases it bugs people (including me) when it is not close to what I want.  An Auber PID controller will keep those temps in check to within 1-2 degrees of the setpoint.  They sell for anywhere from $45 for the single probe that you install in the SG or a project box to around $190 for the dual probe plug 'n play version.

The second reason is that the temp display on the Bradley is not always all that accurate.  Many of us use a Maverick ET-732 to more precisely monitor the cooking chamber and internal meat temps.
