Pork loin Canadian Bacon On The Go

Bought one of these for 32 bucks, said it was a Pork loin back what ever that is ( me no butcher )
Going for some Canadian bacon, peameal style (for those that don't know corn meal is the same stuff). Cutting into 3 equal sections.



Should look something like this when done:


The dry meets the wet..........brown suger, maple syrup, garlic powder and onion powder. 1 half pound of my bacon maple cure from click here

All mixed together for some fun


Added some netting to them to give them that rounded look


All bagged and off to the fridge. Recipe calls for 21 days but I have done it in 14 days and even think it could have been shorter but it will go 14 for sure depending on my days off to get this done.


For those of you that don't know fill your sink full of water, take your baggie and dunk it in the water, all the air will escape out the top and zip it shut. Works great.

Don that's a full loin. Make some great center cut pork chops out of the... center of it.

If you can get the cornmeal to stick like it is in the picture you posted please share!!!!!

When I make peameal bacon, I can never get it to coat like that.

I'm not sure of the ingredients in your wet brine, but it shouldn't take no longer than 3 days to fully cure; 4 at the most.

Just went 7 days in the wet cure. Heres what I got

After the soak in cold water


After 3 hours of smoke


Gave them a glaze of maple syrup


In the house cooling down


Only did one with the corn meal


Off to the fridge over night

Taking one out camping tomorrow, The others are going to new homes  ;)  The corn meal one is for a lady that used to get them when she  was living in Toronto so I said I would make her one.
If I remember I will try and get a sliced picture of the one I am taking camping.

Back from three days of fun in the sun, man it was hot.

Heres the bacon cut open for breakfast.


Did 90% of our cooking over a open flame. Nothing better than getting up and getting the fire going to cook breakfast.  :)
