Andouille shortage in Alaska

Well the boss lady wanted real gumbo but there was no andouille to be found in the last frontier.
Fortunately thanks to a book the smoking monkey sent me we found the perfect recipe! I won't bore you with the mixing details.

Stuffed and hanging out overnight before it hits the smoker.


A few hours of smoke and the magic happens.


Couple of days rest and test time.


Spicy, smokey and perfect for the gumbo!
