It was a Snack Stix kinda weekend

On Saturday morning I mixed up 2, 5 pound batches of Snack Stix.

Loaded them into the Bradley's.

After a few hours they was hanging to bloom.



All cut up ready for an overnight in the fridge before packaging.





Went out for dinner with the family. Stopped at the grocery store, seen they had 10 pound tubes of burger on sale. Nothing planned for Sunday anyhow. So what the heck made 2 more batches.

All cut up and ready for an overnight in the fridge. As you can see in the picture the casings are really dry and glossy. The overnight in the fridge in a plastic bag will create steam from the residual heat. Which will soften the casings back up and loose the glossy appearance. 19mm on the left 21mm on the right.



Everyone wants to see the money shot. I had one of the legs from looping break off. So here it is. still warm and not set up.



And another one that was cut off for quality control purposes



That was my weekend 20 pounds of Burger turned into 15 pounds of Snack Stix. There is a 25% loss. I scaled everything. Thanks for looking
