Summer sausage and snack stix

Hello everyone
Last night I did a batch of Summer sausage ten pounds and a batch of Snack stix 5 pounds I used a mix of 70/30 elk/porkbutt in both sausages and used premixed seasoning from the sausage maker that I doctored up to fit my tastes :-) I stuffed into casings and let cure in the fridge for a few hours while I went to a buddys house and watched the Seahawks game Here is a pic
