Russian Sausage

Time to try another new sausage flavor. this time I will be doing Russian Sausage #1 from the Len Poli site.

The spices mixed in after the first grind through a 10mm plate



After a second grind through 4mm plate



Pan frying a test patty



A little smoke in the garage



This recipe doesn't call for smoke. If I fire up the smoker its getting SMOKE!!! After 2 hours of Hickory



After a water bath hanging to bloom



After a few minutes the color changed some





Ready for packaging



Had to take a look at it.



Ready for the freezer

Looks real good Chris.
Did it have any special spices in it. From the looks of things it looked like quite a few different things. And the most important question?? how did it taste???

The odd spices are dill seed and caraway seed. It tastes all right but I think it is missing something. The Lady I made it for has a Russian husband and they love it. So I must have made it right!

You be thinking wrong Cory! ;D The Adobo Recado is much lighter in color.

I see what you did there.  ;) Stand corrected, bravo on making the 2 sets of pics look almost exactly the same. Went back a looked closer and they are different.
