Gator Andouille

Yeah i think thats what im going to make. Got poke already ground.

Got my Andouille mix, paprika, cure #1



1lb chopped gator added to 4lb ground pork.



Mix the cure with 1/4 cup cold distilled water for better distribution.

Paprika being added. My Andouille mix already has cayenne.



Mixed by hand and ready for the bag.



Fridge overnight to let it all come together.

Rick that is so cool !! what's the gator actually taste like? I think I watch to much swamp people as I would love to try it sometime.

Chris where do get gator around here? It's really amazing how many relatives chicken has as every thing usually tastes like chicken!!

I do not know why people think gator tastes like chicken? Yes I'm aware its a joke. But I had it once at one of Rick's smokouts in PA. And it was great. Definitely not chicken!  ;D ;D ;D

I took a 14 hour drive down to NOLA and bought a couple pounds at Rouses grocery
