Brisket

Ok, going to the drags in NH this weekend. When I do a brisket I smoke it for @ 3 hrs than wrap it in foil and finish it. Gonna be gone the day should I just leave it smoking and cooking unwrapped or smoke it the night before for a couple hours refrigerate it wrap it in foil than cook it the next day while were gone?

When you say gone, for how long? Who is going to take it out?

While I have done overnight cooks where I didn't stay up all night, and cooks where I have left for a quick trip to the store, I would be hesitant leaving the Bradley unattended for a long period of time. While overall it is a safe unit, there have been some grease fires in some units. (Due to water bowls full of drippings, meat touching the sides or backs, and other "non-normal" events.)

I would definitely have it far away from the house or any other flammable structure that I cared about.

Just my opinion.
