New knife and a brisket

A new "old hickory" knife arrived in the mail today, with a 14 in blade it has a good heft and came sharp.I put it to work on a 12 lb brisket and cut off the smaller end for pastrami. The larger piece is frozen and I'll make another later on.

Geez, that thing looks more like a machete than a knife!  Holy cow!

My bet is that you are going to love your Old Hickory.  About 45 years ago, when I was working in restaurant kitchens, one place had an orphan Old Hickory paring knife laying around.  The knife didn't look very impressive, but boy could you sharpen that thing up razor sharp.  It would slash through a  36 inch piece of freezer paper like a hot knife through soft butter.  Today, I've got more flashy and more expensive big name knives, and I've got much better sharpening equipment.  But, nothing I've got will take an edge like that Old Hickory did.

When I'm having a Jimmy Carter moment, I still lust after that paring knife.  ;)
