Italian sausage recipe

Was wondering if anyone had a recipe for mild Italian sausage they were willing to share?

5 lbs. pork shoulder butt, cut into 1" cubes
3 tablespoons kosher salt
2 tablespoons sugar
2 tablespoons sweet Spanish paprika
2 tablespoons fennel seeds
2 teaspoons minced garlic
2 teaspoons ground black pepper


3/4 cup water
1/4 cup red wine vinegar

Combine all ingredients except the water and vinegar and toss to distribute the seasonings. Chill until ready to grind.
Grind the mixture through the small die into a bowl set in ice.
Add the water and vinegar to the meat mixture and mix with the paddle attachment until the liquids are incorporated and the mixture has developed a uniform, sticky appearance, about 1 minute on medium speed.
Saute a small portion of the sausage, taste, and adjust seasonings in necessary.
Stuff into hog casings, and twist into 6" links.

This is from Michael Ruhlman's "Charcuterie". I've made it many times. The original recipe has 4 lbs of pork butt and 1 lb of back fat.

I use this recipe exclusively for my Italian sausage. I have not found one any better. Put some crushed chilies in if you want to kick up the heat.

My favorite, from Carlo Middione:

5 pounds pork butt, coarse ground
5t salt
1 C minced fresh parsley
5 T fennel seeds
1 t black pepper
1 C dry white wine ( or water, or red wine (grouperman addition))
2 T red chili pepper flakes (optional)
1C shredded Caciocavallo or Pecorino romano cheese (optional)


I like to use both optional ingredients and whatever old wine I happen to have. Leave out pepper and use cheese for a nice sweet.

Mix all ingredients thoroughly with your hands and let sit a few hours. Stuff into hog casings.

Thanks for the recipes .Im sure I'll try them all.I went with the first one for now just made 5lbs of ground .
