A 5 lb piece of pastrami just out of the smoker. I use Habs recipe as it always turns out so good.

That's making me hungry.

I'm hoping the price of brisket flats will go down, or if a get lucky I'm hoping to come across a beef plate. The price of brisket right now is outrageous. I've tried other cuts of beef, but nothing beats the flavor of brisket pastrami.
