Its finally warming up. I think its time for my first brisket this weekend. I have a 9lb flat plus tip. Going to cut in 3rds and try some different rubs. I saw a thread a while back that just about everyone raved about, but now that I need it I cant find it. If anyone can help me find it I would be grateful. I figure about 4 hours smoke and 12 or so more hours at 200. Then FTC.

I just dont remember. I may have been all about a brisket recipe. It might have been one that showed musterd to be applied before the rub. It was a long how-to to smoke a recipe from start to finish.

Was it an Owrstrich post? or check I think HABs had one with link on seperating the flat and point? As Gizmo says many good ones. Dont be surprised at a 18 hours plus total and then FTC. It will take FOREVER if you go low and slow.  150 to 160 is hard. you will think something is broke but it is just the magic happening. IT at least 180 and close to 190 is better - then FTC.

Check Os postings and Habs postings.  I think the mustard was NePaSmoker.

Habanero Smoker

I can't recall that particular thread. I do remember someone applying mustard, but I can't find the tread. I believe it was NePa.
