I am going to smoke two shoulders and a brisket. I only have one temp probe. I think the shoulders will be done fist so I will put the probe in that first. Does this correct?

size and position really matter  ;D

Soooo would be hard to say. I would put the brisket on top and a probe in one of the shoulders below if what i imagine is what you have. when the smoke is done boat the brisket and finish it in your oven - or smoker - in the manner Gizmo posts.

Will be a good long smoke in any case  8)
