Same topic at RupKin@ but much lower temps on TS (167)

Hi,

New to this or any other forum so apoligies if not using correctly.  I brined and rubbed two racks of spareribs and brined only a rack of beef ribs. Loaded smoker up at 7am and been smoking nearly four hours now with door openned only once.  It is 80 degrees outside but the built-in thermo and my own True Temp probe in the oven chamber still won't get past 167 degrees.  Am I ok?  Is the meat ok?  Should I stop and get them into the oven at 200 degrees with FTO approach?   Sorry for what must be a same old question but after so much longing I want my first experience to be healthy and ok.  Advice please?  And thanks to all for all the great info I've read already for many hours.

First of all, relax and enjoy.  It does take time to get your loaded smoker up to temp.  Preheating the smoker wide open for an hour helps.  Don't open the door.  What is your desired cabinet temp?  Move the slider temp controller all the way to the right.  I usually have a target cooking temp of around 200 or so on ribs.  Your not that far off, give it some more time and monitor the temp.  DO NOT OPEN THE DOOR!!!!!

Thanks acords.

I pulled the beef ribs before reading your reply and they internally cooked to 160 degrees.  I forget whether beef ribs need to go to the recommended temps for pork (180) and stay there for a good period.

The pork racks are running 132 internally and the oven is at about 165.  I have closed the smoke generater after the first four hour period.

Got some from scratch pizza dough out of fridge for a NY pie so I can now take your advice and let things just run.  But what to do with the beef ribs which are sitting in foil waiting on a decision???

If you turn the smoke generator back on you cabinet internal temperature will recover faster.

Other things you should look at if your cabinet is recovering slow. Check the outlet you are using. The amperage of that circuit and other appliances sharing that same circuit could be drawing too much power for the BS to run at it's best. I use to have a problem with temperature recovery, until I had some renovations done, and was able to put my BS on another circuit, and it made a significant improvement.

Be sure the vent is open about one-third.  If you close it all the way the temp may not get up enough and you might also damage the generator.
