Vac Pac and Bacon

Last night I put a full loin in the fridge for cure. I will normally not let the food saver pull the full vac on the loin.  This time I was dreaming and two 4 pounders are fully vac and sealed.  :-[  :-[

Do you suppose the vac will cause the cure to penitrate faster? Other differences to expect?  ???

It is harder to massage / flip over to redistribute the juices.  Out of foodsaver rolls and dont want to run out into the fires to get them.  ;D

This is either dumb or a good idea not sure which.  ;)

I think the question of will it penetrate fasted would be a yes but... That leads to the second question, Does it actually cure any faster?

It's a good question, unfortunately I don't know the answer to it.

the loin has flattened out quite a lot and franky the diameter seems about the same so instead of round the vac seal flattened the loin but it is not any smaller.  It seems to me the cure may be faster because of the reduced thickness as much as the vac.  ???  They are making juice real nice and all that sooo...  :-\

So I will pull one out late Friday and the other several hours later on Saturday - Will be a Saturday night smoke. The Friday will be 5 days and not the usual 6.  Will see if it gains a day.
