Habanero Smoker

I've never smoked steaks, but my favorite wood for beef is oak.

I like oak, pecan, mesquite, hickory in that order for beef steaks.

BTW, should I season it before smoking, before wraping, or before grilling?

I would go along with Ice.  Season the meat before grilling.

I did it.......................

Smoked steak with oak for 30 minutes on Saturday. Wrapped in Saran and put in Ref. overnight. Sunday afternoon, I opened it and what a great smell. Grilled like above and it was the best steak I ever ate.

Thanks again to each of for helping me on this.

I am glad it came out good for you.  ;)  I am going to smoke a couple of 14 oz bone in NY strips tomorrow and grill the next day for my birthday.  Wife wants to take me out but I like MY steaks better.  May let her sautee some small sliced fungus to go on them, bake some potatoes and prepare some asparagus to go with it all.  My daughter sent me a 12 pack sample of beer from around the world so life will be good.  ;D

Man that sounds good sherlock. Got to try that soon. I've been cooking steaks over a real oak hardwood fire this summer but those days are numbered. White stuff on the hills. EEEEEEKKK ;D
