Hello everyone newbie here. What does FTC mean?  And how much smoke is too much?  When smoking a pork butt apx. 6# should i use continuious smoke for the entire cooking time desired?  Or do i smoke it for a desired time then continue to cook it without smoke until it reaches my desired temp.  Really need some help, thanks

Only apply smoke for the first part of your smoke.  Most will apply smoke for four hours, but some like a stronger smoke flavor.  After the four hours, empty out the water bowl and replace with fresh, warm water.

I think Arcs defined FTC for you in a separate post.

Good luck!  post some pictures of the finished food.

Talked to him a couple of weeks ago. Still wasn't in the house yet and didn't have internet service where he was at the moment. Got himself a new smoker and PID so he's ready for smoking. Hope the family gets back into the house so things can kind of get back to normal.
