Suggestions for Re-Heating Sliced Pastrami

Hi Everyone,

I did my first pastrami (Hab's recipe) yesterday and it turned out great. I will be making my first sandwich today and was wondering what you Pastrami makers do when re-heating slices of pastrami. I thought I would wrap some slices in tightly sealed foil with a couple of drops of water and place in a 350F oven for a few minutes. Any suggestions appreciated. Thanks

That will work MWS.
I also will toss slices on a hot griddle with a little non-stick spay and just give the surface a quick crispin.

The Best IMHO:
You can also create the sandwich open face with the pastrami and cheese on top, toss it under the broiler until the cheese starts bubbling.  Yummmm.

Both you and Gizmo have good ways of reheating. I've tried a couple of ways. If I'm only reheating enough for a sandwich I place the slices on a plate, sprinkle a little water on it, cover with plastic wrap and give it 15 second at a time until it is at the temperature I like. I also have an electric steamer that has two trays. This steamer will easily steam about 3-4 pounds of pastrami without any problems.

Steaming is the way to go! Plumps it up good and moist- the big name delis do it that way! ;)

I wonder if I can do that with my wife's new clothes dryer  ??? It steams and has some kind of a rack to put stuff on inside of it...

Seemed like a bad buy to me when I saw them hooking up a water hose to the dryer.  Kinda coming together for me now...  8)

I have to say, the pastrami is quite possibly the best thing to come out of my Bradley. I sliced it thin, made a foil pouch with a few drops of water and let it steam for about 5 mins at 350F in the toaster oven. I bought a nice German rye loaf fresh out of the oven at the local bakery and made a sandwich with a good horseradish mustard and pickle on the side. Ive already gone through two pounds of the stuff.

I know you purests are going to be put off, but, I used a four pound top round roast sliced horizontally that gave me two - 2 inch thick slabs. It worked like a hot dang. Briskets are hard to come by up here. Cheers

I can testify first hand about the severe consequences of modifying the boss lady's appliances.  :o
I am no longer allowed in the house with tools "Unsupervised)!!!  >:(
WCK be careful buddy. We all like you the way you are and don't want to remember you as "the way you were" after getting home from the ER. :D ;D ;)
Just one example was when I installed a steam generator in the Viking convection oven to help me with bread baking. I was baking some french bread and the boss lady went to "peek" to see how it was doing. Well first off it would have helped if I had told her I installed it. After she replaced the make-up and re-did the hair from the steam bath the trouble began. I swear she made Jackie Chan look like he was moving in slow motion when she started whopping on me. :'( ::)
From now on I check with the "Project engineer" before starting anything.
Careful on the brainstorming. :D ;)

 :D  :D  :D ok, great forum with good advice about making sure she is not home when I try it.

MWS no purist stuff from me... pastrami comes from just about anything that will hold still not even beef  ;D I get a lot of 'purist stuff from my son anyway.
