Thanks for the response everyone.Also how long on the smoke and cook time, and what temp should be used?

Habanero Smoker

In the past I use 3 hours of smoke, but have cut down to 1:40 - 2 hours of smoke. I try to get the smoker as hot as I can, but keep in mind if you want 3 hours of smoke then I would not smoke at a temperature higher then 225°F. Smoke/cook until an internal temperature of 162-165°F.

I use 4 hours of Hickory at a temp of 225. I spot check for internal temperature of 165. I usually smoke about 24 legs at a time, it takes the smoker a while to get back up to temp after the legs are added. Four to five hours is the usual time.
