Tonights dinner: Chicken Neptune

Butterfly a few chicken breasts so they will cook even.
Sprinkle liberly with favorite seasoning. (I'm using cajun)
Grill on hot bbq till just done.

I'm cheating a little here. Bought a box of Cornbread stuffing mix.
Mix according to directions.
After stuffing is mixed add about 8-10 ounces of crab meat to the stuffing. (crawfish tails would be great also)
Put mixture in bottom of baking dish, place grilled chicken on top of stuffing.

Put into pre-heated oven at 325-350 degrees F for 30-40 minutes.
Everything is alrerady cooked it just needs to warm up.

While in oven prepare some Hollandaise sauce.

About half way through the cooking I'm going to top with shredded smoked sharp cheddar.
After dish comes out of oven top whole thing with hollandaise sauce.

It came out great. The crabmeat stuffing was sooooo good.  ;D

I actually took the chicken off the grill so it was a little underdone so it would not dry out in the oven. The hint of smoke from the cheese was nice and the hollandaise sause pulled it all together. This is a keeper for me.

That sounds really good.  I'm drooling just thinking about it.  I wish my wife wasn't allergic to shellfish.

That does sound like a very tasty meal.  I will definitely have to give that a try.  May just have to send the kids down to the crick to get some mud bugs.

Carter, too bad about the allergy. My mother always loved shellfish till she became allergic then she could never even taste it again.  without having major problems.

Smoking Duck, I changed my mind. It was terrible, do not make this dish, send all the mudbugs to me for proper disposal.  ;D Crick.... you really are from PA talking like that!  :D
