Can I make a large batch of ABT's (2 or 3 full racks) ??

Smoke time?
Temp?
Which wood?

My ET-73 and PID arrived, need to play!! ;)

Schneep...I've only made them 4 or 5 times...but...

a. the number of racks...should not be an issue...they have no bulk to lower the box temp. A bunch of racks I would do 1.5-1.75 hours.
b. I do everything between 210 and 225 (hot smoking) (now there is an opinion that says do them hotter to crisp the bacon) I usually finish under the broiler so as not to pop the filling out. Broil is fast and efficient for crispy.
c. I use hickory...I like the way it stands up to the jalepenos. I like a fairly strongish smoke...but to me mesquite is too strong (and bitter at the end) There certainly those (him...WTS...that would disagree) but...hope this helps?  :)

My favorite wood for ABT's is pecan.

When Ive done large batches of ABT's I usually use Hickory and smoke at 225 for 2-3 hrs. start peeking in at the 2 hour mark if you see the CC starting to squirt out pull em out they be done.
