Beef stew

Woke up yesterday morning to an overcast sky, sleet and drizzle highs in the 30's here on the high ground of Texas!  Good day for some stew.  Sauteed some onion, garlic and jalapenos then cubed up some boneless beef ribs smoked on Sunday



Threw this in with diced tomatos, celery and pretty much every spice I had in the cabinet and let simmer for a few hours



Diced up a couple of taters and I cheated and used a bag of frozen veggies at the tale end of the simmer.  Got a skillet of cornbread cooked up.



And did some deep fried tater salad, from what was leftover from this batch

Balled up, dredged in flour, egg and breadcrumbs



Into the deep fry at 350 and drained on paper sacks (I split those two open so you could see the soft middle)



Time to eat

Down there?  Down there?  Heck Lubbock is almost above the Mason/Dixon line!   ;D  That's the part of Texas people around here drive through to get to N.M, Arizona and Cal.  It's why people around here say they don't like Texas, because that is the only part they get to see.   :o   But Muleshoe aint' too bad.  Actually dated Miss Muleshoe while in college.  Nice girl but lots of makeup.  Muleshoe - home of "The Mule Memorial" and home of the "Mighty Mules".   If you notice WTS cooks and smokes a lot.  Anybody ever wonder why?  About the only other thing to do in Lubbock is to watch the center pivot irrigation systems go around and around making their own style of crop circles!  ;D  Well, I say that, but one could also get a bunch of friends together and get the chaise yard loungers out and put them in a circle and watch a pump jack go up and down!
