SO FAR. all my mistakes have good.

Opps, forgot my first ribs. I used enough rub for ten slabs on just one and finished by slathering on a very hot BBQ sauce that I had never tried. They were so hot they could not be eaten. Being one who don't know when to give up, I soaked them in cold water for an hour, rinsed them, soaked some more, heated them up and ate them. They were excellent.

In fact as we speak, I have a mistake waiting for me at home. I put a 22# ham in brine without "pumping" it (injecting 10% of it weight with cure). So now, I can't Start it with the 12 hours of 120 degrees the recipe calls for. I must treat it as a totally fresh ham by smoking at 225 deg and finishing in the oven. Hopefully, I can continue to eat my mistakes.

Man, what a long day. Just got done work - 20 hours. Wonder if the boss will give me
the day off tomorrow. I know he's planning on cutting us loose early anyway.
If so, maybe I'll smoke something. I could do a chicken again. I've been knawing on
that last one all week and just lovin it. I don't even particularly like chicken but
I love it smoked.
      I see I'm in good company with some of my cooking disasters.
I haven't made anything bad with the smoker yet, but my regular cooking
has gotten to be pathetic. My wife says I'm out of practice; sounds like a good
excuse to me.
     Anyway, I've enjoyed this forum...great support for my new "toy".
