Smoked pickled eggs

I do believe that I will make these today.

It is really good!  We diced up egg, jalapenos and onions from the jar.  I added a couple slices of diced sweet pickle, some celery salt, fresh ground pepper and mayo to the tuna. 
They will make great sandwiches to start out the work week's lunches.

They look good but god forbid a white picked egg up in Pa, they are all red ones up there, eh NePa, but I'm in Florida now and you don't see any color pickled eggs in the store here so I'm game.

When I was researching how to make pickled eggs I came across a few Pickled Red Eggs recipes, but I'm not a big fan of beets. I just can't visualize the combination of beets and eggs. But here's a recipe for you:

I don't like beets either but I eat red beet eggs all the time in PA they sell them everywhere, give it a try
