Ribs - pix

Membrane removed, rub down with mustard.


My rub applied and to the fridge for an overnight stay.


Smoked with hickory 4 hours and foiled for 2 hours. Came out great!
I actually smoked 6 racks ate 1 and  vacpacked the rest for later.

Gotta ask, how did you fit the full rack in the Bradley without cutting in half.

 ;D These particular ribs were actually smoked on my propane smoker. I do cut them in half when using my Bradley, which incidentally is the one I use most especially since I got a pid. I recently bought a 6 rack Bradley so I can do more ribs per smoke. I've found that smoking on the bradley is much easier and the results have been better. I'm considering converting my propane smoker to use the Bradley smoke generator with the cold box.


Habanero Smoker

Nice looking ribs. I don't cut my racks in half. I've found that cutting the last 3 ribs off the small end the rest of the rack fits perfectly. Then I place the 3 rib sections on a separate tray. If you are only smoking/cooking two racks you can loosely roll them, and stand them up vertically. You can fit two full racks of ribs on one tray this way.

I do it like Habs. I cut the last three off and then have a tray with ends. Makes for great lunches.
