Jerky cut across the grain

I am thinking of making some jerky by taking an eye round and cutting it across the grain. I am wondering if it might not fall apart. Has anyone out there done this?

Yes i have done this. Its like making jerky rounds. You will be fine.

Some people even cut it on a 45 degree angle to kinda split the diference so to speak. Anyway you cut it, it will turn out great.

I cut it with the grain and it seems to work for me. Although NePas jerky rounds sound like a good idea to me.

I just did 20 Lbs the other day. All against the grain.

turned out fine.

I partially freeze the meat before slicing.

Thanks for the input.

I have always cut it with the grain and just wanted to try something different.  Due to recent changes in my life I thought that there will be no smoking in the near future. Perhaps this will be therapeutic for me.

I can only guess as to the recent changes in your life but I have had to put my smoking on hold for a bit but I have found a place where I can use my bradley and have some fun. I too am hoping it will be therapuetic.

Didn't get to try it. Eye round was $4.99 a pound so I passed. :o

Ouch. It was $3.66 here, with one @ 2.66 in the "used meat" bin.

I have 13lb sitting in the cure.
