Meatloaf tomorrow!

Went to Sam's today.  Jan snatched up a bunch of ground beef and sweet italian sausage and declared "you're smoking meatloaf tomorrow".  Who am I to argue?  Then, we are walking down the aisle and I spot a beautiful 8 pound angus beef brisket flat and she says " I have been wanting you to smoke a brisket".  Again, who am I to argue?

I think I'm keeping this woman. ;D ;D

I have 3 meatloafs in the BDS, 2 hours 40 minutes of hickory and continue cooking until an IT of 160.  At around 150, I will baste with Iceman's sauce.  Opened my last jar for this. :'(

The meatloafs are a combination of ground beef and sweet italian sausage, onions, bell pepper, various spices, worchestershire sauce, some of Ice's sauce, bread crumb, eggs, milk, etc.  They weigh about 2 and a half pounds each.

Dang, I'm getting hungry :P

I did my first meatloaf last night. I didn't know what I was missing. I will be making alot more of these. ;D

Speaking in your terms, what can be wrong with the equivalent of 3 two and a half pound fatties? :D ;)  They are finished and sitting out to rest.  I can't begin to tell you how good they smell.

Don't forget to mix in that shot glass of Ice's sauce if you still have some. It's awesome in a meatloaf or fatty!  :D

I remembered the Ice's sauce to mix in before smoking from your post about meatloafs.  It really does elevate the flavor of the meatloaf.
