The only attempt I remember seeing here did not turn out well.

Sorry, Tilapia is not on my approved food list.

I'll disagree on this one....Tilapia into the smoke for an hour, then off to the grill for a finish!  But of course ya have to use mesquite!  ;D

WTS - I'm sure farmed tilapia are fine but in Hawaii & other parts of the Pacific the wild version has a "social stigma" (for want of a better term) that I just don't deal with.

Thanks Guys:  WTS what temperature for the hour of smoke?

Filets or whole..  I was given a case of 12" whole, gutted and scaled.  I have tried to cook a dozen of ways and still can't find a way of making them taste like a fish.   Wife thought i might smoke them.  Thanks for the info.

I've only done filets and 150-170 temp for smoke, then off to the grill or pan fry to finish!  Oh yeah, lots of lemon/lime juice!
