What's smoking the weekend of April 25?

Don't know about ya'll, but I will finally be able to use my Bradley in a while.  Seems that every time in the last 3 months, I've gotten around to smoking something at home, there has either been rain or a threat of rain - and I don't have any roof over the deck, so I have to use a stickburner.  This weekend, probably like a lot of ya'll, I'll be working with pine nuts, raisins, and pork tenderloin!  I also might do some lox - eating on my last fillet now.  What about you - just the Iron Chef stuff or are you doing more?

I think i am going to take it easy and a day off without smoke. Well maybe a ceegar smoke  ;D  :D

I am smokin the following:

7lbs of pork belly - following directions from 10.5 on the recipe site  (my first try at this)
7lbs of Canadian Bacon - following directions from Habs on the recipe site (yeah this one is always great, my kids love it)

If I have time left over I might just do a little pork tenderloin, pine nuts, and raisins.  The weather here is suppose to be beautiful, in the 80's and sunny.

My wife told me that I need to empty the freezer before I even think about doing another smoke.

I will however smoke a Romeo J Juletta Churchhill on Saturday since its my bday.

My weekend is on Tues. and Weds. Put these in this morning. Nice sized rack from Asian market, $1.20 a pound.

I'm going out catching prawns this weekend, got a couple of good feeds worth last weekend. I may smoke 'em up th following weekend. Haven't tried smoked prawns yet. I'm thinking chili and lime and some apple smoke...

Pork tenderloin, raisins, pinenuts & .................

My parents are coming to visit so I think I will get some steaks and cold smoke on Friday night for grilling Sat.   Also during the cold smoke session I'm going to do some of the spicy smoked almonds from Charcuterie.

I put a 9 lb fresh ham in brine last night for next weekends smoke.

With the cold weather up here right now I think I might try doing a batch of Lox.
