Jerky Help

Tonight is the first time I made jerky, and I need some help.

I put the jerky in my DBS with with hickory smoke. Everything was going fine for the first 15 minutes. Then my generator started to give me error message "E". After some panicing, I was able to find out about the error message on the forum.

I took the generator apart. I blew it out. I checked the gray switch. I put it all back together and started up my smoker again.

Everything worked fine. However, the cabinet temperature dropped from 180 degrees to 97 degrees. I got it back up to temperature again and finished my smoking. I am finishing the jerky in a dehydrator, because it started to rain.

My question is about the jerky. Will it be safe to eat? I used HM original seasoning and cure. I just want to know if I wasted my time finishing the jerky or will it be OK.

Your jerky is fine, go with it.

I will assume it was not below 140 deg for too long so I would say, Yes it will be safe.  The cure should have kept it safe.  Just make sure you get the meat temp to 160 deg, at least that is the official recommendations.

It turned out good for my first try I think. It looks dry, but it is moist in the middle. My wife likes it, so that is all that matters.



I am ready to try some more.
