Habanero's right on the money with this one, Dillon.  My taste buds a fairly similar to his, for example, but I can tell the difference between apple and pecan or maple.  Duck-man calls mesquite the "devil-wood" and avoids using it at all, whereas some of us use it sparingly. Etc., etc., etc. . . . Keeping a log is a terrific idea
