Country Bacon

Did up some belly bacon started on Aug 8 th. Cut in half rubbed down with country brown sugar cure 1 Tab per pound. Wrapped in plastic then vacuumed and in the fridge for a week. Flip over every night b4 bed.

After a week of tossing and turning

After 2 baths 1 hr each in fresh water and hanging in front of the fan for an hr
(I did some Canadian Bacon at the same time, thats another post)

In the smoker with 3 hr Hickory, pulled when the IT (in the meaty part) hit 150F

Its now Aug 17 th. and ready to cut and package

Havent bought bacon from the store in years,for breakfest anyway. Still buy the thin cheep crap for ABT's and stuff that just need a blanket

Its called a "Bacon hook" you can get them at Allied Kenco or Butcher Packer or any large butcher supply store. I dont no how to do the link thing or i would.

I love my bacon hangers.  Have 4 just like yours.  They really work well I think.

What is the advantage of the hooks over racks ?

If I have a large load I do the rack-inverted rack thing.
