What a day yesterday was for smoke!

I started off the morning smoking ten lbs of bacon.  Used apple wood for about 5hrs.  It came out okay, a little too sweet and I think I might get the next belly skinned before I try again.

After the bacon came off I threw in a slab of ribs using a set of Steven Rachlin rib racks that fit very well into the OBS and are on clearance at BB&B for 12 bucks.

About an hour into the ribs I looked out my front window to see a plume of smoke, jumped up, ran outside and saw the hills above our house were on fire.  The fire has burned several thousand acres and came to up to the field in front of my house, about 500 yards away.  It was a harrowing night but all seems clear this morning.  Thank you Cal Fire.

The ribs were great.

Glad things turned out ok. Only a couple evac routes around here the past few days. The rest was covered with Water. 6.5 inches of rain in one day is more than enough. To the west of us they had 13 inches.

Kitchendad,

I am glad that all is okay.

I just wish that some one would come up with a way to harvest good brush fire smoke to be re - used in smokers.
