After three years of much (ab)use, my regular racks are showing rust et al.

I just replaced them.

I did order the High temp screens and will be keeping the low temp jerky ones also, afterall, we can never have enough stuff!! ;D
As usual, extremely fast ordering and shipping from Yard & Pool, great place to do business with.

Been doing alot of salmon lately, plus now I need to do some lake trout and the 14 lb rainbow I caught Sunday out on Lake Michigan.

I guess a question is, can I use the same brine on the trout that I have been using for the salmon ?(Kummoks)

Four of my racks are the original, with most of the plating worn off. To prevent rusting I have to dry the racks in the oven immediately after washing. I just preheat to 200°F, throw the racks in, turn off the oven and take them out after a few minutes.
