Bacon, how its made.

Don't know if this is posted in the right section or not.....mods, please feel free to move to the proper section.

I've toured a meat packing plant, but never saw how they did their bacon. Now, liver - well, you don't want to know or see !!!

What I found interesting in this vid on bacon is that they use liquid smoke for smoked bacon. I was under the ill informed opinion that they smoked it!!

I caught that one when it aired on TV.   It was a good episode.  I'm in a plant every once in a while that slaughters 23,000+ hogs a day so I get to see where they cut the pork belly from but didn't know how they mass produced the bacon until that show.

One of the best recipes on here is from 10.5 with pics.  I believe it is on the recipe site.  Made it a few times already....its great.

After watching that video I'll definitely stick to making my own.  Wouldn't mind having access to some of those raw pork belly's - with the skin.  Thanks for the post though.  I'm always interested in how things are done commercially.

Definately!

Though having one of those machines to remove the skin would be useful, IMO the worst job when making bacon is getting the skin off the side of pork!

My brother made bacon at Farmland for years, the totes that liquid smoke comes in has a skull and cross bones on the label, kinda makes you wounder.
