Hi all I am about to get a new Bradley smoker in the next month or so and  just doing my research.
I currently own a smaller chip smoker that is gas fueled, it is ok but temb control is a real bugger.

About me , Well I,m a Chef by trade and a Aussie that has just moved to Canada !
I have 2 kids and a wonderful wife, my Cooking was in Fusing Aussie bush foods with a Asian influence, now in Canada I can afford to play with  salmon and seafood a lot more, thus will be very interested in the cold smoking side of things.

You are going to love it here but I lived in Oz for 3 months ( Melbourne ) a few years ago and wish I never came home !
Something just bit me there.  I cried when I had to get on the plane to come home.  The beer ( how I miss VB ) the blondes on the beach....   the climate....  the fun
But welcome and happy smoking.
All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Would you like smoke with that sir ?

Will be anxious to hear your ideas and learn from your culinary skills.  The Bradley does some great smoked salmon.

We are all here to answer any questions you may have along the way.  First tidbit of info for you.  Always run your Braldey with the vent at least 50% open.  100% if you're doing poultry.
