Mexican Pork Loin

Hi!  I did this today. 


We seasoned it with Mexican seasonings, and put it in the smoker.  We smoked it until it reached an IT of 160 degrees.
We also threw some peanuts in the smoker too which you will see on a separate message (under smoked vegies & nuts).
We served the loin with guacamole and fried potatoes:

Now that looks good! Them taters look like taters should. Beautiful !

Scott must be on a diet!!  I seen him eat at the smokeout, Or that is Junes plate. Looks really good I could go for a plate of that right now.

Great looking Bratkartoffeln!!  That's the way they ought be.  Pork looks mighty tasty too, especially with the guacamole.

I'm weak and partial to Mexican food. More light bulbs go off each day I explore topics here.
