I'm still on a Mexican kick. Found some real life skirt steak today at my favorite bad habit place(only because I eat too much there!) It took me a few minutes to explain I wanted 2lbs of it, already marinada.


Fired up the Primo for a quick sear at 450.


Meanwhile, I had all the stuff to make 'Bistec a la Mexicana'

His and Hers that is





Sliced up the skirt and divided it up between the HOT and the mild.

Plated it with some left over Spanish rice and some stewed corn and tomatoes.
