Ham Question?

First merry Christmas to you all...

...but I am going to smoke a whole ham I got at the store, then finish with the mustard glaze of Hab's in the oven. My question is should I score the ham, stick in some cloves, before I put it in the smoker, or wait to do that when I finish it in the oven?

MB, If you score it first, the smoke will penetrate more, but the gaps of the score will be larger.

If you don't score, the opposite.

IMO I would score first, but don't make your score marks too small.
The best of both worlds. Plus that glaze will works it way in there
real good.

If you are using the smoker just to apply smoke, then you can score it.

If it is an uncooked or partially cooked ham and you intend to bring it to 152°F in the smoker; if it still has the skin on I would score it, if there is no skin or little fat I would not score until it was time to glaze. If it is the later and you score it first, you ham may come out too dry.

Thx...yep just want to apply smoke, skin is on, and just needs to be heated.
