First Time Smoking Cheese

I have about 8 lbs of mild cheddar going in a few minutes.

It is windy, and about 45F. I hooked up my cardboard box and I am going to leave the element off and see what happens.

opened up my first pack of the smoked cheese today after 7 days of curing.  The 4 hours of hickory was not overpowering.  It was good.
