I would like to make some peppered bacon. Any thoughts on when to add the pepper? Type of pepper? Tips?

I put the pepper on my back bacon after it comes out of the rinse and before allowing it to sit and dry till tackey. I use freshly course ground black pepper.

I do it the way Pens does, but I use cracked peppercorns.

This post mybe a little late.  I have done it the way Pens and Habs have done it and it turns out great.  I have also put it in as part of my curing spices.  It gives it a subtle pepper flavor, more of a background taste than a strong pepper taste.  I like it both ways, my wife does not like all of the pepper on the outside.  My favorite combination is onion powder, garlic powder and pepper in my cure...great flavor.
