Had the most wonderful meal last night based around some pecan smoked brisket done with a Wild Willy rub. (Smoke and Spice)

However, what added to the meal was the mushroom and red wine gravy with the mushrooms sauteed in smoked butter, and stir fried (in olive oil) spinach with smoked garlic that was awesome! Also included was some sweet potato mash.

Originally I thought the smoked food content of this meal might be too much but it worked out just perfect.

All washed down with a few glasses of white wine. Happiness is....![:D][:D][:D]

Hi Olds,

<blockquote id="quote"><font size="1" face="Verdana, Arial, Helvetica" id="quote">quote:<hr height="1" noshade id="quote"> Ok you got me... how does one smoke butter? <hr height="1" noshade id="quote"></blockquote id="quote"></font id="quote">

Just added some 8oz / 250 grm blocks of butter to the BS when I cold oak smoked my last batch of cheese.

Given that i used the John Watkins/Grakka method using a cardboard box the temperature in the smoker never rose above about 8degC/38degF. The butter retained it shape and consistancy without a problem.

I pulled the butter at 2 hours as I smoke my cheese for 5 hours then wrapped it in plastic wrap and returned to the fridge for a few days before I started to use.[:D][:D][:D][8D]

Only problem arose whem "someone" confused it for cheese and tried to grate/shred it!![:I][:I]

Seems the old saying if you can eat it you can smoke it still rings true. I wanna try that butter on my popcorn.

Hi John,

Thanks my friend, I am actually with you on the star situation, particularly "advanced" status.

I think there should be some sort of time served element before someone gets to this status, say 100 posts and at least 6 months or maybe a year on the forum. ( I have just done myself out of my newly acquired star under this system![:I])

Under the current system someone can become an advanced member with just a few days determined posting, perhaps quantity and not quality in some instances.

That is the only change I would make other than when people get to their millenium but I do understand what Oldman posted about the potential problems with any change to the current system.
