Sorry, not one of Tiger's flings

The butt hit the brine last night, 10 pounder
kosher salt
garlic
onion and onion powder
honey
dry mustard
of course some water

just pulled it from the fridge and made up a creole butter
no definitive way how to do this so .....
1/2 pound butter
1/2 beer
garlic pow
onion pow
cayene
paprika
dry mustard
brown sugar
worcestire

I pulverized all the spices in my coffee grinder
melted the butter
Laid in half the beer in the pot and half in me
Let it warm a touch
Added the spices and worsestire
Mixed vigoroulsy

Started injecting with luck till almost the end
Butt is fully injected now and hangng out in the fridge

maybe not traditional but should be good

Made up my own Super Bowl rub for 4 racks of back ribs, they are hanging out getting happy in the fridge till Sunday

Will start the butt cook tomorrow afternoon
Tater salad and slaw for sides, make tomorrow afternoon
pick up fresh kasiers for the piggy Sunday morning
Another laod of Aunt ems pretzels, this time with garlic butter
A virgin cut into my new salami, more cuts in my old salami, some cheese

Now I just have to dream up a dessert

All I wanted to do was slow smoke some ribs.  Another addiction created thanks to the Bradley that requires regular servicing...  But what an addiction to have.  Even better to share here with some of the best people on the planet.

Do you have a decent recipe, I might give it a shot

I cranked out some more pretzels last night and made a stock pot full of tomatoe sauce with some smoked ground beef
Lasagna will be dinner tonight, too many things going on in the smoker

Had to pull the butt out of the smoker last night as it was startingto get too cold for te DBS to keep up, evem in Hotel Bradley
Its 7 30 AM and the house smells amazing, the but has been in the crock pot all night, still needs some more warmth to get to 195
It looks amazing sitting in there

I've used these two for when I don't want to mess with juicing key limes.  Of course, they came off the side of the bottle of Nellie & Joes' key lime juice

Key Lime Pie
•   9" graham cracker pie crust
•   14 oz. can of sweetened condensed milk
•   3 egg yolks (whites not used)
•   ½ cup Nellie & Joe's Key West Lime Juice
Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie crust and bake at 350º for 15 minutes. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream, or meringue, and garnish with lime slices.


My MIL would make this one

Key Lime "No Cook" Cool Whip Recipe
•   1 can sweetened condensed milk
•   ½ cup Nellie & Joe's Key West Lime
•   8 oz. container coolwhip
•   Graham cracker crust
Whisk sweetened condensed milk with Nellie & Joe's Key West Lime Juice until evenly mixed. Fold in coolwhip and fill crust. Refrigerate.


And for the times you just want to get lime juice squirted in the eye and feel adventurous – this one is with fresh key limes.

•   1/2 cup fresh lime juice (12 to 15 key limes)
•   4 teaspoons grated lime zest
•   4 egg yolks
•   1 - 14 ounce can sweetened condensed milk
•   11 graham crackers
•   3 tablespoons granulated sugar
•   5 tablespoons unsalted butter, melted
It's easier to remove the lime zest from whole limes so I would start with that. Then I would cut the limes in half and squeeze out the juice being careful not to include any pits.  I squeeze the limes over a big tea strainer

Process the graham crackers in a food processor or blender.

Preheat oven to 325 degrees.

Mix graham cracker crumbs and sugar in another bowl.  Melt butter in micro or over low heat and  add butter and stir with a fork until well blended.   Pour this mixture into a 9-inch pie pan and press over the bottom and up the sides of the pan. Try using the bottom of a measuring cup to make sure the graham cracker mixture forms a firm crust on the bottom of the pie pan.  Bake on the center rack for about 15 minutes until the crust is lightly brown, remove and let cool to room temperature.
Whisk the egg yolks and lime zest together in a bowl until tinted light green. This takes about 2 minutes.  Beat in milk, then juice and set aside at room temperature till it thickens.  Pour the lime filling into crust, spread evenly, and then bake for 15 minutes until the center sets, but still wiggles when shaken.  Remove from oven and cool to room temperature.  Refrigerate for at least three hours until well chilled.

Some of you might like to serve it with a whipped cream topping or a meringue topping, but many  (including myself)  prefer keeping it simple – no topping.
