My mom loved my pulled pork so much that she wanted to take the leftovers home.  The only problem is that I live in FL and they live in Texas.  From the time they left my house until the time the arrive back in Texas is about 8-9 hours.  So I decided to use the FTC technique, but without the C, only with frozen meat instead.  Here's what I did:

I had 2lbs leftover pulled pork.  No Vac Sealer yet  :-\ so I did an old trick my dad told me about.  I put the pork in a gallon size ziplock freezer bag submerged in water except for the seal to expel the air, which worked pretty well.  I then froze the pork and this morning I wrapped in heavy duty foil followed.  Next I rolled the frozen pork ziplock bag in a small hand towel followed by another 3 layers heavy duty foil.  When they were ready to leave and catch their plane we put it in their suitcase.  I wonder how that looked to the TSA screeners??? lol

Any guesses on how frozen the pork will be after their 8-9 hour trip back to Texas????

Kewl way of doing that.

I have vac seal and sent 60 lbs of fozen goodies in a dbl wall styro cooler by UPS and it took 4 days and nothing was thawed out.

I think you're good to go.  But, if you haven't heard from mom by tomorrow ...

The pork is well cooked and smoked.  It could probably sit on the kitchen counter for a day or two.  Maybe less.  The Trichanea (sic?) are dead.  I wouldn't worry about it.

Snelly,

I load frozen briskets wrapped in foil, followed by a large trash bag in my daughter's suitcase regularly for a flight from DFW to NY.  They are fine.  She has even taken them in her backpack as a carry on.

She took two in a backpack one time and they tried to confiscate one but she wouldn't let them have it.  There were laughs all around.

I talked to my dad when he got home and the pork was still frozen.  However his did say the TSA opened the bag unwrapped the pork and then re-wrapped it up along with their nice little TSA tape with seal.  So all was good!

I've done this, but packed the frozen goodies, wrapped in a towel, in a little Igloo cooler, which I then packed in the suitcase.

The contents were still frozen 20+ hours later.

I got a little 'love note' from the TSA people as well!

I thought the package would raise some eyebrows.  At least we know some of the TSA workers are doing their jobs.

Mental note:
Next time I travel and take along a little food, pack a special sample for TSA labeled:  "If you find this, you are doing a great job, please accept this little gift for ensuring my safty is first."

In Texas all incoming food is ok, they know it not worth eating. Leaving Texas and taking food is a different story. ;D

My shoes?  Well, that's some sliced brisket officer.  Just keeping it warm.
