FTC Turkey temp increase

I know I've read this somewhere on the forum, but can't find the thread.

We are doing two turkeys, I'm smoking one and my better half is doing one in the oven. So, I'm not going to be able to use the oven - upon threat of death by my better half for getting in the way!!

If I FTC the turkey from the smoker for about an hour, with an original IT of 165, how much is the temp going to rise?

You will probably get between 5 and 10 degrees but more likely 8 degrees. So you may want to go to 172 to 175 for a finish closer to 185 degrees.

I only take my turkey to 165°F, measured at the thickest point of the thigh. I don't FTC, but if you do I would take the turkey out at 160°F. When you FTC a turkey that has been cooked at around 225°F you may see a 5 degree rise.
