Bacon and onion sausage

I was in a mood for sausage this weekend so in addition to the 6# of summer I thought I would try and duplicate a sausage recipe
I really like.  started with 5# of ground pork.  Broke out the KA grinder for the first time(loved it!) and ground up a Lb of bacon.(semi froze)
I was really just guessing as to the ingredients, going from memory of the taste of the sausage.  And I have not had it in a few years,
I use to get it a butcher shop up on the Bruce.  Off topic , to the pork and pork I added half a large onion which I fine diced and sweated
just to soften.  Then I added salt fresh tellicherry pepper, a little garlic and onion powder mixed and stuffed.  I had to bbq one just to taste
as I was planning on giving some to my parents(dads fav sausage)and my sister and BIL, as well as feeding wife's parents tonight.
I was happy with the taste but needed some tweaking, but good enough to give to family(beggars can't be choosers).  Sister and BIL
bbq last night for supper and said the were great!!  I bbq mine tonight, and what a difference a night in the fridge made!  The flavors
really came alive, everyone including my self were quite impressed with how they turned out.  Recipe will still be in development, but I think
it's a dam good start. ;)  This is all toooo much FUN! :D

Here it is all stuffed up(6#) not too pretty, the masters was on I it was getting late!

Its amazing how a day in the fridge will bring out the flavors.

I always grind, mix and stuff then a 12 hr nap in the fridge before cook or smoke

Oh yeah, me too.  Makes a big difference.

That sausage looks good sNc.  I just ground up some butt and was trying to figure out what to make.  I may give some of that a try.

During that wait time consume many cold ones which brings out the tast of the sausage much better ;D

Havent herd that for a wile, we also use NFG at work.  ;)

I too use that line.  Thanks Lump, but I may still be a little green around the edges! ;)
