I am new to smoking, I bought a wal-mart gas smoker and tried ribs and they were so good I ordered a Bradley 4 rake digital. While waiting for delivery, I tried the Bradley Smoked Salmon Recipe. I think I followed the recipe to the letter but the Salmon was so salty the cat would not eat the fish. Where did I go wrong. I don't think I can blame it on the char broil smoker.

Welcome N4.  Sorry the fish was not up to snuff.  Have not used the Bradley but do use Rub with Love Salmon Rub.  Turns out great.

Well the bradley recipe is for 20 lbs of salmon, 1 lb salt and 2 oz of white sugar. I took the ratio and reduced it for amount of fish. The instructions say to put enough rub to keep the oil from wetting the rub cover and put in the fridge 14 hours. I think the problem is not resining the salt before smoking. The recipe says to even the cure by rubbing. I should have went to the fish section of this forum.

Thanks, I now have the bradley smoker for the next try.
