Hi there,
I`m a "Newbie" from England,& like you have just taken dely. of a Bradley Smoker.Excited,you cant believe how much.
Got a freezer full of Trout & need to get going,but I have read so much about the Pro`s & Con`s of curing!!
Some people say a dry cure, others say salt & sugar mixed with a little water,but for how long.
Anyone out there got time to put a few lines together & guide me in the right direction.I`m getting Hungry.

Where is the rib tutorial?  That sounds like someplace I need to start at...

Go to susanminor.org, recipe section and look for pork.  Lot's of recipes and techniques.
