Smoked Pickled Eggs

Doing the smoked pickled eggs Lumpy brought to the smokeout a couple weeks ago.

Getting things together. Sweet vidalia onions, peeled eggs, mason jars, jalapenos, garlic, vinegar's, pepper corns, salt & sugar.

All cut and ready for 2 hours of cold smoke. Alternating hickory and apple.

Eggs are smoked  ;D



Onions, japs, garlic and the rest are being heated.



And i got 4 mason jars

Geez, I guess I'm gonna have to try them things too.

If you would have used the wide-mouth jars,

You wouldn't have to dirty up a spoon to get one out! ;D

Yummy.  I just made some the other night as well.

Never had a pickled egg. I've made smoked deviled eggs before though and those were fantastic. I think I have a stigma about pickled eggs because they've always seemed like seedy bar food to me, lol.

They go with Pickled Sausage (& Beer) really well!
