Squirt's Serrano Slurry Sauce (pressure prepped w/ props to Pachanga)

Here is my spin on Pachanga's fiery Serrano sauce.


The players.










Into the pool.  (2 cups of chicken stock + 1 cup of equal parts of white/rice wine/apple cider vinegar + heavy shakes of Ancho chili powder, Malabar black pepper and sea salt)




Yeah, doing this OUTSIDE.



A couple of sessions 'under pressure'.




Upwind, gloves on.




Some ice cubes to cool things down.




BZZZZZZTTTT.






[lots of straining later]

Looks like we get about 3 quarts of liquid heat.






Bottled up and ready to go to the office.




The little one is in the freezer for a test.

Looks good, I need to get some peppers and try that.   I probably won't use by itself but looks like it will make a good base for things.

I just had some on an omelet, and it is pretty tasty.   It could stand to be a bit thicker, and someone suggested upping the salt content.

All in all, worth the effort.

I was wondering about the thickness of that stuff too. But I figured you weren't going for a salsa, but more of a red hot type splash.

Next time, I'll let it simmer for a while with the lid off.  (and leave out the ice cubes)

It's got a good flavor..
